Halloumi and watermelon are meant for each other. Salty, chewy cheese meets juicy, sweet fruit, and it all comes together with crisp cucumbers, fragrant herbs, and a zesty dressing. Every bite hits all the right notes: salty, sweet, tart, and fresh. ๐
Ingredients:
2 cups watermelon (cubed or balled)
1โ2 cucumbers, thinly sliced
3โ4 slices of halloumi cheese, grilled until golden
A handful of fresh basil & mint leaves (plus extra for serving)
Juice of ยฝ lemon or lime
1 tbsp olive oil
1 tbsp pomegranate molasses or balsamic glaze
Instructions:
Grill the halloumi slices until golden and crisp on both sides.
In a bowl, gently toss the watermelon, cucumbers, herbs, and grilled halloumi.
Drizzle with lemon juice, olive oil, and pomegranate molasses or balsamic glaze.
Finish with extra herbs on top and serve chilled or at room temp. ๐
